Oil from Deffends-centuaries old olive trees
The olive oil of Deffends bears witness to the age old agricultural tradition of the Domaine.The remains of the Gallo Roman villa, the neighbouring via Aurélia and the oppidum (fortified town) that dominates the hill have accompanied the cultivation of three hundred olive trees on the restanques (walls) of dry stones allowing hillside cultivation.Even the exceptional frost of ’56 failed to affect them. ( ). Their roots are even more developed than their trunks.
Olives like grapes…...
We collect the olives when each variety has matured and press them without delay. Our oil comes from the first cold press of more than 20 different varieties that reflect the richness of this particular ‘terroir’. We make our olive oil in the same spirit as we make our wine: to extract the best out of each vintage.

Un peu d'histoire....

L'orgue de la Basilique de Saint-Maximin a été construit en 1773 par Jean Esprit Isnard, dominicain de Tarascon, il se compose d’un double buffet, quatre claviers 43 jeux et 2962 tuyaux. C’est aujourd’hui le meilleur instrument classique conservé. Il est connu des organistes du monde entier. Il fût sauvé à la Révolution par Lucien Bonaparte qui y aurait fait jouer la Marseillaise devant Barras. L’orgue masque aujourd’hui une fresque baroque monumentale représentant le Jugement Dernier.
