A moment in Le Deffends… The Oullières promenade

Bread, wine and oil! We invite you to come and meet these three fundamental elements of Provençal gastronomy! In the Saint Maximinois region, agriculture, with the exception of livestock farming, was largely self-sufficient. The oullières organized the plains and hillsides. Between the “faïsses” (terraces) were long avenues of olive trees, between which were planted vines whose “pampres” (vine shoots with leaves and bunches) were left on the ground; wheat was sown between the rows. The grapes were harvested in September and the olives were “acaned” in November.
